Normalize kindness

Let’s normalize being kind and expecting nothing in return.

There was a time when someone was kind to you when you had nothing to give. They shared a smile when all you had were tears, bitterness, and a broken heart.

Someone blessed you, randomly, financially… when you had absolutely nothing and didn’t know when or if you could ever repay them.

Someone forgave you after you wronged them.

Someone gave you the benefit of the doubt when you were acting mean and ugly when your life seemed to be falling apart.

Someone cared enough to call and check on you when you had checked out and darkness was creeping in.

Kindness is powerful. It has the ability to bring about change; to turn someone’s life around for the better.

Be kind because it’s the right thing to do. It feels good. It makes others feel good.

I think about how Jesus was kind to the woman at the well. I think about how His being kind changed her life. -John 4

I think of the woman caught in adultery and how Jesus’ kindness saved her from the crowd. -John 8

I think about how Joseph was kind to his bothers after they betrayed him. -Genesis 50

I think of how David was kind to Saul’s relative Mephibosheth even after everything Saul did to harm David. -2 Samuel 9

It may sound crazy to others, but it sounds beautiful to God.

Each of us holds the power to bring about change with a single act of kindness. Imagine what we could do if we were intentional with kindness. Whose life will you impact when you are kind to them? Whose life will be impacted by seeing you be kind to others, especially when you are well within your right to be angry or unpleasant because of how they treated you?

Let’s give it a try and be kind for kindness sake. Let’s smile, compliment, serve, encourage, forgive, protect, give, be compassionate, be considerate, extend grace… and on and on.

Kindness is powerful.

This ‘Just Egg’ plant-based breakfast burrito is delicious!

I’ve been working from home since the pandemic started and I love working from home. But one thing I miss about work… is the cooked to order café! They had the BEST breakfast burritos!

I’ve been doing well and making better choices since I’ve been home. I’ve avoided the dreaded Covid 15 and actually lost some weight. But one of the things I’ve paid more attention to since I’ve been home is how food made me feel. I’ve noticed that some foods make me feel icky… so I made some changes.

This breakfast burrito has no real recipe – beacuse which ones do?. So, I’ll share my ingredients and thoughts about the vegan egg, by Just Egg, the new Chao Mexican style vegan shreds from Field Roast and the Morning Star breakfast patty.


So, the Just Egg… It only comes in a 12 oz container. I shook it up and gave it a pour…measuring about 1.5 of the serving size. The consistency is kinda like melted ice cream meets Elmer’s glue? Ummm…yeah… so… Anyway,  I added mine to sautéed veggies and sausage substitute so I can’t say what it would do on its own… but I immediately began to stir it. After a few turns it started to brown and firm up. I cannot say that I tasted anything eggy as I consumed my burrito, but with no saturated fat and no cholesterol I will definitely use it again. I’d say from this experience, it is a win!

The Morning Star sausage is always a winner in my book. It’s flavorful, very reminiscent of a breakfast sausage patty, has a 30 second heat up, and can be crumbled/chopped for versatility. I sometimes have one with my breakfast porridge or just alone with a coffee in the morning. In this case, it was a perfect addition to a burrito! They have a maple one too but I stick with the orginal because I prefer the flavor and it is more versatile.

Now, I just recently found out that Field Roast released some new options of Chao. I really like the original slices. I like the flavor and it melts well. I purchased the shredded original too on my most recent grocery haul but I was most looking forward to trying the Mexican Style. Upon opening the package, there is a noticeable jalapeño smell, which I welcomed. The cheese wasn’t spicy, but it does have a assertive jalapeño flavor. I instantly knew that it would be a favorite. It melted well and wasn’t hard to work with. This will be a great addition to anything that has a Santa Fe vibe for sure!

Even though burritos don’t technically have a recipe…at least to me… mine included:
Green pepper
Sweet onions
Minced garlic
Morning Star breakfast patty
Chao Mexican style shreds
Salsa
Avocado
Just Egg-egg substitute
Salt and pepper

So all in all, this was a true winner! And yes… the meat eaters will love a burrito like this! So if you are vegetarian, flexitarian, plant-based, transitioning or just going meatless a few days a month… this breakfast is sure to please!

Is my heart in it?

There are sports fans and then there are SPORTS FANS!

Sports fans mark their calendars,  buy the jerseys and may even paint their faces and have season tickets. Sports fans show up in the stadium and they enjoy the crowd, they cheer for their team and high-five their friends. They might even host a game day at their home. They look the part.

Then, there are SPORTS FANS. They look very similar to sports fans however upon further inpection it is clear that something is different. There is a deeper level of involvement.

Not only do they look the part… their passion takes it to another level. They know the names of the players on the team. They know their history; childhood, high-school, college, special moves, their victories, their defeats, their previous teams. And not only do they know the players…they know the history of the team itself. They know the coach; the coaches history. They know the game and the history of the game. See, they’re more deeply involved. This is personal to them. They love it!

When we see them, they seem the same. But, once a SPORTS FAN starts talking in depth to a sports fan…it is clear that they aren’t so similar afterall. The passion isn’t there…the love isn’t there. The sports fan has the look but the SPORTS FAN has the heart.

I think we have a similar situation in the Body of Christ, the church. We have church goers and we have followers of Christ. At first glance they look very similar. But, upon further inspection… there is something different. And to the human eye and understanding it may not be clear which is which; but God knows. *And let me just say…it serves us not to merely be showing up. God desires a deeper connection. He is looking into our hearts and He can see if you are just showing up, and if you are invested.

Now, I am not pointing the finger at anyone. Clearly, I don’t have a heaven or a hell to put you in and it is certainly not my job to be the judge of your heart.

I am writing this to encourage you to examine yourself. To take a moment in the privacy of your own space, your own life, and your own convictions and ask, “Am I a fan or a FAN?… Am I a church-goer or am I a follower of Christ? Does God have my heart?”

If you want God to have your heart and have made the choice today to take a step to start a relationship with Christ, pray this prayer:

Dear God,
Thank You for loving me and for sending your Son Jesus so that I can be made right before you. I accept the free gift of salvation. Forgive me of my sins. James 4:8 says that if I come close to You, You will come close to me. So, I give my heart to You and I desire a closer relationship with You.
Teach me to do your will, for you are my God. May your gracious Spirit lead me forward on a firm footing. (Psalms 143:10)

In Jesus’ name, Amen.

Well, what now??

Make time to read the Word of God, the Bible, and ask God for understanding. Read different translations to compare the text (NIV, NLT, ESV, AMP etc).

  • Spend time each day talking with God (prayer)…and don’t forget to be quiet and listen for Him to speak to your spirit.

  • Super important >>Give yourself a little grace! You won’t be perfect and you’ll take some mis-steps; we all do. But, talk to God about it and ask for forgivenesss.

  • Oh, and remember – don’t give up, the journey is just beginning!

    Liaison Lash Bond – DOES IT WORK?

    I recently saw a social media ad for a product designed to make your eyelashes fuller and longer- Liaison Lash Bond. I was instantly intrigued.

    I am not one to wear false lashes, but I do love the look of full long lashes. And while I like to wear make-up, one of my goals this year was to focus on skincare and having an overall healthy, pretty, non make-up look. Of course, one of the things that I believe contribute to that is having full, long lashes (without mascara).

    So, I purchased the deal from the ad and got 2 tubes of Liaison Lash Bond. As part of my nightly routine, I applied one swipe to my top lid as the final step of my nightly skincare routine.

    I noticed a difference after 2 months. I was about to go to the grocery store and had just put on real clothes (getting dressed to leave the house is a big deal nowadays … especially when working from home in the pandemic). Anyway, I was looking in the mirror and noticed that it looked like I was wearing mascara or eyeliner on the top and bottom lashes. I blinked twice in disbelief and came in closer for a better look. It was working! I had taken a before picture so just to be sure I took another photo to compare. Sure enough… my lashes were much fuller and slightly longer.

    It has now been 3 full months and I still have not come close to finishing the first tube. I’m pretty sure that this one tube will last another 3 months…or come close.

    I cannot say that this will work for everyone. If you do try this, just know you will probably not see results in a week. Give it time and be consistent. And TAKE PICTURES! If you are sensitive to products… you may want to test it on a Friday night so you have the weekend if something goes wrong.

    All in all…I am super happy that I tried this product and will continue to use it as part of my nightly routine. I’m looking forward to seeing how my lashes look in another 3 months!

    I feel the most beautiful when I am raw, unfiltered, and uncensored. When I let the realness of my spirit shine through. No fleeked out eyebrows, no laid down edges, no made up face. Accepting the magnitude of God’s grace and mercy. Seeing myself through the eyes of the Father.

    My grandmother once told me that I was like velvet. Soft, but strong. I see what she means now.

    I love how God made me.

    I chose to appreciate the silver lining of these last few months. Months that have changed the lives of many in so many different ways. Months that have allowed me the opportunity to breathe in the quiet stillness. The quiet stillness where God is.

    I am currenlty becoming exactly who God intended despite my attempts to discredit myself after my missteps and mistakes. He allowed it. He knew I needed it.

    I’m quirky. I’m smart and witty. I’m passionate and bold. Sometimes sassy and spicy at the same time. I have an extremely gentle heart. I love hard, I love deeply, and I love with all of me. I’m bold and opinionated. I see the very best of every person and I hold them to it. I’m full of courage and I’m full of faith. I’m an encourager. I will have you believing that you can slay any giant that stands in your way. There is so much more to say…so much more to show.

    I love how God made me. I feel the most beautiful when I am raw, unfiltered, and uncensored. Seeing myself through the eyes of the Father.

    What eggs revealed about growth…

    Growing up, my mom made a hot breakfast every Saturday and Sunday. Sometimes I would put a slice of cheese on my eggs.

    Out of nowhere… I wanted some cheese on my eggs. So, I made breakfast this morning and added the cheese. As I’m sitting here eating a breakfast reminiscent of my childhood, the very thing I used to enjoy, I realize I don’t have the same taste that I used to. I didn’t want to waste my efforts, so of course I ate them.

    But, I can’t help but to think of how sometimes we find ourselves returning to things of our past that made us happy then only to find out that we’ve outgrown them. Our taste has changed over the years as we’ve matured, expanded our palates, and have come to love new things through new experiences.

    I think of 2 scriptures…

    2 Corinthians 5:17 – That means that anyone who belongs to Christ has become a new person. The old life is gone; a new life has begun!

    And

    1 Corinthians 13:11 – When I was a child, I spoke and thought and reasoned as a child. But when I grew up, I put away childish things.

    Throughout life, the things we do tend to fit that time.

    When we come into a relationship with Christ and we grow in our relationships and start to focus on living a life that pleases God… the old things that used to fit our previous life will no longer fit.

    Like how my adult self feels about those cheese eggs from my childhood.

    Inventory of Worship

    “Where is the newborn king of the Jews? We saw his star as it rose, and we have come to worship him.”
    Matthew 2:2 NLT

    I think we need to pause and take inventory of our worship.

    It seems like recently, more often than not, the acts of worship are attached to the desire for things, for blessings. Whether they have been given already or we have yet to receive and are waiting expectantly for the Lord to open up the windows of heaven and pour out a blessing that we don’t have room to receive.

    Now, there is nothing wrong with blessings or wanting or even asking for them. But when that is most of what we do… When our worshipping him is only in expectation of blessings…have we lost sight of who He is?

    This has been on my heart for some time now and I simply cannot go another day without saying that we need to stop. Stop and take inventory of our worship. Stop. Stop asking and pleading and just focus on who He IS.

    He is our Savior. The Messiah. The Christ.

    When I read the verse, I paused. I paused because it spoke to what I have been seeing. It spoke to what I have been feeling needed to be said. We all, myself included, need to come to this place.

    “Where is the newborn king of the Jews? We saw his star as it rose, and we have come to worship him.”
    Matthew 2:2 NLT

    Before Jesus was born, it was prophesied that the Savior would come. And at that time, as an infant, He had prefomed no miracles…He just…was. He had arrived. And the belief in who He was…was enough. He fulfilled the prophecy, just with His birth…and they wanted to go to Him and worship Him. Why?…Because He is our Savior! They traveled to be with Him; not for a healing or a miracle…just to worship Him.

    Let us all take inventory. Let us all remember who He is. Emmanuel. God with us. He is God in the flesh, sent to save us.

    Our Savior. The Messiah.

    So, just for a moment…let us stop focusing on all of our request and expectations and worship Him just for who He is. Let’s worship Him with songs, with instruments, with our gifts, our talents and most of all…with how we life our lives.

    I pray that this message stays in your heart and mind. He deserves our worship, not just for the things He does…but for who He is.

    Pasta Salad (No vinegar and no mayo)

    I don’t normally eat pasta…but I had a taste for it so I made this recipe up and it turned out pretty good so I decided to share it.

    It is a brightly flavored light dish that can be a side dish or an entree.

    INGREDIENTS:

    8 oz of dried whole wheat rotini pasta (half of a standard box)

    1 15oz can of chickpeas

    1 15oz can of medium or large olives

    10 -15 Cherry tomatoes

    1 cucumber

    2 small avocados

    1 shallot

    1/2 cup of chopped fresh parsley

    3 tablespoons of finely chopped chives

    1 1/2 to 2 large lemons

    1/2 medium to large lime

    4 tablespoons of olive oil

    Salt and cracked pepper to taste

    Cashews to garnish

    DIRECTIONS:
    – Prepare pasta per package instructions. Salt the water and add a splash of oil in the water for added flavor and to keep from sticking. Drain and rinse in cold water. Put into a large mixing bowl and drizzle half of the olive oil on the noodles to keep them from sticking.

    While pasta is cooking, prep other ingredients as follows:

    – Drain and rinse chickpeas and add to large mixing bowl

    – Drain and slice olives and add to mixing bowl. ( I LOVE black olives so I tend to be heavy handed with these. You can use a half of a can depending on your preference.)

    – Slice cherry tomatoes in half and add to mixing bowl. (If you prefer, you can slice Roma tomatoes, heirlooms, yellow, green or the whole stoplight…or any other tomato of your choice)

    – Use a vegetable peeler or knife and peel the cucumber. Slice the lengthwise and remove the seeds. Then slice the half into quarters (lengthwise) and cut into small pieces. Add to mixing bowl.

    – Cut avocados into medium cubes and add to mixing bowl (add more if you’d like)

    – Dice shallots and add to mixing bowl

    – Finely chop parsley and chives and add to bowl.

    – Juice the lemons and set aside

    – Juice the lime and set aside

    -Combine all chopped veggies and chickpeas with pasta and pour the remaining olive oil and half of the lemon juice and then mix gently.

    Taste…add salt and pepper and gently mix again. Slowly add half of the lime juice and gently mix. Taste it. Continue to add lemon, lime, salt and pepper until desired flavor. I used it all but you may have a different palette when it comes to acidic flavors.

    I grated some cashews on top…if you eat cheese or cheese substitute-go right on ahead. But if you don’t and you’re not allergic to nuts…give it a try.

    I omitted the garlic this time eventhough I love it. You can add a clove of minced garlic or a few sprinkles of garlic powder for added deliciousness.

    This pasta salad is vinegar free, mayo free, vegetarian, vegan and Daniel Fast-friendly.

    3 Bean Veggie Chili

    I was looking for a hearty, veggie packed robust veggie chili and I just couldn’t find one… SO I made something up. It turned out really well so I decided to share it.

    I used dark and light kidneys bean and red beans. You can use whatever beans you like. I was going to add black beans but decided to save them for a black and white chili.

    3 Bean Veggie Chili. Daniel Fast-Friendly Recipe

    INGREDIENTS:
    1 green pepper
    1 red pepper
    1 orange pepper
    1 yellow pepper
    1 jalapeno
    1 sweet onion (may use any onion you prefer)
    4 cloves of garlic
    1 15.6 oz. can red beans
    1 15.6 oz. can light red kidney beans
    1 15.6 oz. can dark red kidney beans
    1 28 oz. can whole tomatoes
    1 28 oz. can crushed tomatoes
    3 tablespoons chili powder
    2 teaspoons of cumin
    1/2 teaspoon dried oregano
    1/2 teaspoon dried parsley
    1/4 teaspoon dried basil
    Pinch of coriander
    Pinch of thyme
    3-4 tablespoons of olive oil
    Salt and pepper to taste
    (May add a pinch or so of cayenne for added spice)
    1 1/2 cup of water (optional)

    Disregard the small can of crushed tomatoes. I used the big can instead.

    I realized I needed the bigger can of crushed tomatoes once I poured I the whole ones…

    DIRECTIONS:
    -In your slow cooker add the whole tomatoes (tomatoes may be cut in halves or quarters prior to cooking or you can just use diced or another can of crushed if you don’t like chucks of tomato. I like to let them cook and fall apart naturally) also add crushed tomatoes.
    -Put beans in colander/strainer and strain off the preservatives and rinse thoroughly.

    Add to tomatoes

    -Turn cooker to high and put the lid on.

    -Dice all peppers and put in a bowl (set aside)

    -Dice onions
    -Heat olive oil in pan (medium heat)
    -Saute onions until some color is on them and then add the peppers
    -Gently salt and pepper the veggies
    -Cook the peppers until slightly tender then crush the garlic and add to veggies. Stir
    -Cook for about 1-2 minutes (do not let the garlic burn>>yuck!)
    -add the veggies to the slow cooker
    -add all of the seasoning and stir
    -optional: I added the water to help it cook down. The water will evaporate off as it cools leaving a hearty robust chili
    -Salt and pepper to taste

    (As with ANY soup you’ll want to avoid a lot of salt until the soup has cooked and be patient with adding salt. Once it is over salted…youl will either need to add a whole skinned potato to try to absorb it or well… half it and start adding more ingredients…which leads to a BIG OL’ pot of soup.)

    Cook on high until you see the ingredients playing well together and having fun… about 3-4 hours…then turn to low and cook an hour or so longer until the color darkens a bit.

    May be enjoyed alone or with brown rice or polenta (made with water, almond milk, soy milk, coconut milk or veggie stock). If you eat cheese, cheese it up. If you like it with chips…get crunchy with it.

    Eat some now…freeze some for later 😊

    Homemade Hummus

    I recently made my first batch of hummus and I have had several people ask me about what the ingredients were…so here it is.

    I did some research on recipes…some said to take that soft skin covering off, some said leave it on. Some recipes said to cook them and some just were straight out of the can. So I decided to try one version and then the next time I make it to try something different and see what changes. In this recipe, you will be cooking your chickpeas.

    Ok, ok… so this is what I did for my first batch.

    Ingredients:

    • 1 (15.6 oz) can of chickpeas

    • 1/2 tsp baking soda

    • 1/2 cup tahini

    • 2-3 tbsp olive oil

    • 3-4 tbsp fresh lemon juice (about 1 lemon)

    • 2-3 cloves garlic

    • 2-4 tbsp ice cold water

    • 1-1 1/2 tsp cumin

    • 1/2 to 1 teaspoon of pink Himalayan salt

    Directions:

    1. Drain and rinse the chickpeas. (If you are vegan, this liquid may be something that you can save as it has been substituted for making merengue in several recipes. If not, just discard it.

    (I used Bush’s chickpeas. I love chickpeas and I always have some and I use all brands. I didn’t take pictures of everything as I was making it so this is another can that was in the pantry. It is the Walmart brand. Use what ever you like…if you eat organic then get those.)

    2. Place rinsed chickpeas in a pot with the baking soda, cover with water and boil for 20- 30 minutes until the chickpeas look bloated. The baking soda is supposed to soften the skin so you dont have to peel each one. Also, cooking the chickpeas is supposed to make for a smoother creamier texture. Once they are finished cooking, strain them and rinse them with cold water.

    3. In your food processor (or blender) combine 3 tablespoons of lemon, 1/2 teaspoon of salt and the garlic. (Make sure to peel the garlic) blend together to chop the garlic. Let rest for 5-10 minutes to let the flavors marry.

    4. Add the tahini (make sure you stir the well before adding) to the lemon juice and garlic and process. Scrape down the mixture from the sides if necessary. (I picked this up at Whole Foods but you should be able to find it just about anywhere).

    5. While the food processor is running, add the cold water to make the tahini pale and creamy. Add a little more if your tahini is super thick.

    6. Add the cumin and chickpeas. I am heavy handed with spices so you may want to start with 1/2 tsp of cumin first and add more later if you would like. But I love it, so I added a little more. Start processing the mixture.

    7. While the mixture is processing, carfully add the 2 tbsp of olive oil in the top of the food processor or blender.

    Taste it… you can add a bit more lemon juice for extra zing, more salt if desired, more cumin or if it is still not creamy enough, add a little more water. And process again.

    Scrape it out and into a serving bowl if you are making it for a party, top with a drizzle of olive oil, paprika, or fresh herbs and serve. OR put it into a storage container and top it later.

    I sprinkled a little paprika on mine.

    It stays good in the refrigerator for one week…if it last that long.

    Hummus can be eaten with pita chips, tortilla chips, carrot sticks, sliced cucumbers, used as a spread on sandwiches or in wraps…the list goes on and on.

    Hummus is vegan and Daniel fast friendly.
